Seven Yolk Pasta. Mi Long Do Trung Ga

Adapted from French Laundry Cookbook.  I need  a food processor and a pasta attachment to KitchenAid mixer because I am never kneading the dough good enough by hand.  If you want to make it by hand following the instruction here.

1¾ cup (8 ounces) all-purpose flour
6 large egg yolks
1 large egg
1½ teaspoons olive oil
1 Tablespoon milk
  1. Put all ingredients in a food processor. Pulse until the dough comes together likes wet sand.  Then form it into a ball.  Covered with plastic wrap. Let it rest on the counter about 30 minutes or 1 hour or chilled in the fridge overnight. Then bring it to room temperature before next step.
  2. Kneading, rolling and cutting pasta dough with pasta attachments per manual instruction.  See more instruction to make pasta here.  These makes enough for 4 servings.  The pasta will be more yellow than other making with whole eggs.
