Baked Carnival Squash
1 Carnival squash about 1 -1 1/2 pounds
1/4 tsp sugar
1/8 tsp salt
1/8 tsp ground black pepper
1 tsp vegetable oil or reserved oil of deep fried onion (in deep fried yellow onion post)
1. Preheat oven to 375 oF.
2. Cut squash into half horizontally. Use a spoon scoop out the seed. Coat inside with oil and salt, sugar, and black pepper. Put in a baking sheet with the cut side down. Bake until really soft and tender and a folk or knife should insert easy into the flesh about 1 to 1 1/2 hours. Turn off the heat and keep the squash warm in the oven.
Nasi Goreng
4 cups left over cooked rice,
2 garlic cloves, finely chopped
2 shallot or 1/4 small yellow onion, finely chopped
2 red Thai chili, stem and seed removed, finely chopped
1/2 lb (8 oz) large shrimp, shelled, deveined, cut into small cube crosswise
1/2 tsp shrimp paste or 1 tsp fish sauce
1 Tbs kecap manis (sweet soy sauce)
2 large eggs
1/8 tsp salt
2 green onion, thinly sliced
2 Tbs reserved oil from deep fried onion
Deep fried onion (1/2 recipe of deep fried onion in previous post)
1. Whisk eggs and 1/8 tsp salt. In a large non stick skillet, heating 1/2 tsp oil over medium heat. Add 1/2 eggs and stilt the pan to make an even layer. Cover and cook until the egg set about 30 seconds. Slice it to a cutting board and repeat one more time with remaining egg. Transfer to a cutting board, cut into thin strips.
2. Heat 1 Tbs oil in the same skillet over medium high heat. Stir in garlic, onion, and chili. Cook until fragrant and golden. Add shrimp, cook until shrimp turns opaque look outside. Add rice, mix well. Turn the heat down to medium,then add sweet soy sauce and fish sauce or shrimp paste. Stir until shrimp cooks through, rice heated through, taste and adjust seasoning. Stir in green onion. Remove from heat, transfer rice into baked squash. Put extra rice on a serving platter. Decorate with fried onion or shallot, eggs. Serve immediately. This squash skin is tough can not eat.
*Note:
If you cook for kids skip the chili-it is spicy.
May use 1 tsp regular soy sauce, 1 tsp brown sugar, and 1 tsp molasses for 1 Tbs sweet soy sauce if you do not have sweet soy sauce.
Fresh cooked rice can be used, just spread it out on a baking sheet and cool in the fridge a few hours.
Chicken,ground beef or pork can be used instead of shrimp.
